2 cloves garlic, minced
½ tablespoon salt
1 teaspoon floor cumin
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon chili powder
6 rooster thighs, boneless & skinless, reduce into strips or chunks
2 – 3 tablespoons olive oil
½ onion, reduce into strips or chunks
1 inexperienced bell pepper, reduce into strips or chunks
1 pink bell pepper, reduce into strips or chunks
1 tablespoon tomato paste
3 tablespoons lemon juice
Optionally available toppings: avocado, Cotija cheese, cilantro
Optionally available sides: Mexican rice, black beans
